Recipe of the Week


It looks like we may be in for a siege of cold winter weather, according to the weather forecast. What would be more satisfying than a bowl of hot steaming potato soup?

Potato Soup


10 Idaho potatoes, peeled and chopped


2 Onions, Chopped

2 Large Carrots, Shredded

3 Tablespoons Dried or Chopped Fresh Parsley

5 Cups Water

1/2 Cup(1 Stick) Butter

1 (12 Oz.) Can Evaporated Milk

1 Can Condensed Cream of Chicken Soup

   or Cream of  Celery Soup

Salt and Pepper To Taste


  Combine the first 5 ingredients in a saucepan. Cook, covered over medium heat for 30 minutes or until the potatoes are tender. Add the butter, evaporated milk and soup and mix well. Cook over low heat until heated through. Season with Salt and Pepper. Serves 12.
